Menu Week of 15 February | Joy
Not sure I'm really up for this, but I think it is time to do another week shopping local/organic on a food stamp budget. Just to clarify, I do not do this to put down those on food stamps, rather to show everyone that with careful planning, you can eat local sustainably produced food on a budget. {Frankly, I get a little tired hearing peeps make excuses why they can't afford good food.} There are a lot of vegetarian meals on this menu, but if I can afford it I will buy a pound of Skagit Angus Ground Beef and use it in my chili and tacos {yes, to make my husband happy}.
WEDNESDAY:
Breakfast - Toast, Yogurt with Apricot Jam
Lunch - Cheese, Apple, Baguette {AF+K Delivery Day Lunch}
Dinner - Spinach + Peppered Bacon Quiche
THURSDAY:
Breakfast - Scrambled Egg on Toast
Lunch - Leftovers + 1/2 Apple
Dinner - Pork Fried Rice [bacon]
FRIDAY:
Breakfast - Toast, Yogurt, Apricot Jam
Lunch - Leftovers + 1/2 Apple
Dinner - Locavore Meal 1
SATURDAY:
Breakfast - Baked Apple Cinnamon French Toast
Lunch - Leftovers
Dinner - 3 Bean Chili with Cornbread
SUNDAY:
Breakfast - Leftover Baked French Toast
Lunch - Grilled Cheese Sandwich and Leftover Chili

Okay, so it looks like I will be slightly over the food stamp budget, but I'm okay with that. If my family of three can eat every meal and snack for $115 {$15 over what I would get on food stamps}, then I think that is good enough. No eating out this week, but I know that my family will be fed REAL food for every meal {and primarily local!}.
